Chicken Chilaquiles Angelina

— -- 3 cups of tortilla chips

1 cup of red chili las palmas (enchilada sauce)

¼ chopped onion

1 tablespoon chopped cilantro

½ cup shredded mozzarella cheese

1 cup shredded or cubed chicken

2 cups of water

Salt to taste

A dollop of sour cream

INSTRUCTIONS

1. Lightly oil pan and add chips.

2. Brown the chips slightly.

3. Add onion and saute together.

4. Add red sauce and bring to a boil.

5. Add 2 cups of water and bring to a boil for 10 minutes.

6. Add chicken, cheese, and cilantro and saute for another 10 minutes.

7. Add sour cream on top. Serve.
