Diabetes-Friendly Recipe: Oven-Roasted Turkey Breast

— -- Nothing beats a home-baked turkey breast to use for dinner, in sandwiches or on a salad.

Prep Time: 2-3 hours

Servings: 8

Serving Size: 4 ounces

Ingredients

1 (3-pound) boneless turkey breast

3 cloves garlic, cut into pieces

1 teaspoon garlic powder

1 teaspoon dried thyme leaves

Paprika to taste

Salt and pepper to taste (optional)

½ cup fat-free low-sodium chicken broth

Instructions

1. Preheat the oven to 325 degrees.

2. Rinse the breast and pat dry. Place in a shallow baking dish. Make slits in the breast and stuff with pieces of garlic. Sprinkle with garlic powder, thyme, paprika, and salt and pepper (if using). Add the broth to the dish.

3. Cover loosely with foil and bake for about 1½ hours or until the internal temperature is 170 degrees. Remove the foil the last 30 minutes of cooking to brown. Remove the skin before serving.
