'Nightline's' Cynthia McFadden's Simple Broccoli Recipe

Sept. 7, 2011 -- During our latest episode of "Primetime Nightline," anchor Cynthia McFadden talked with people who struggle with food, including an overweight teenager from Texas named Nick Preto.
Once a 403-pound 16-year-old who used to eat 7,000-calorie meals in a single sitting, Nick underwent gastric bypass surgery and is on his way to living a healthier lifestyle.
Cynthia shared one of her favorite healthy and simple recipes with Nick and his mom. Now you can make that recipe yourself at home.
Ingredients:
Fresh broccoli
Water
1/4 teaspoon Lemon Juice
1 teaspoon Olive Oil
Preparing the Broccoli Recipe:
Cut off the tough stems of the broccoli and break apart the florets. Make enough to fill a small bowl. Add an inch of water. Zap in the microwave for about four minutes, leaving the broccoli a little bit crispy. Add lemon juice and olive oil. Mix together and enjoy. It's delicious!
