Chef's Table Recipe: Apple Cranberry Crisp

Dec 18, 2008 -- For a simple, yet satisfying dessert try this recipe from inside the kitchen of The Green Table.
INGREDIENTS:
Apple–Cranberry Filling
1 ½ pound apples, medium diced (3 ½ cups)
¼ cup sugar
1 ½ cup whole fresh cranberries
1 ½ teaspoons cornstarch
2 tablespoons butter
Topping
1 cup all-purpose flour
1 cup oats
1 cup brown sugar
1 cup sugar
1 cup of sliced almonds
½ teaspoon cinnamon
¼ teaspoon freshly grated nutmeg
2 sticks butter, room temperature, cut into chunks
PREPARATION:
Preheat the oven to 350 F.
Toss the apples with sugar, cranberries, and cornstarch. Melt butter in a heavy bottomed pan and add apple mixture. Mix well and cook 3 to 5 minutes, or until the apples begin to soften. Put mixture into ramekins or a 2-quart baking dish.
Combine flour, oats, brown sugar, almonds, cinnamon, and nutmeg together in a mixing bowl. Blend butter in with your fingers and palms until mixture is crumbly. Cover apple filling with crisp topping. Bake for about 8 minutes or until the mixture bubbles.
CHEF'S TIPS:
Using different kinds of apples, some tart and some sweet makes for a much more layered and nuanced flavor.
Make the topping by vigorously rubbing your hands together as if drying them under an air dryer.
