A 7-layer lemon Swiss roll and amaretti trifle takes the cake for Queen Elizabeth's Platinum Jubilee
Jemma Melvin said the dessert was inspired by the Queen's wedding cake.
A treat fit for Queen Elizabeth II's Platinum Jubilee has been dubbed the top dessert to mark the special occasion and the celebration's official pudding, following a U.K.-wide competition.
Contest organizers selected the seven-layer lemon Swiss roll and amaretti trifle from over 5,000 entries ahead of the four day event, which marks the queen’s 70th year on the throne.
The pudding, or dessert, was made by amateur baker Jemma Melvin, 31, of Southport, a seaside town in northwest England.
“I am so happy. The thought of people recreating my pudding, especially round the Jubilee, is just a total pleasure," Melvin said in a statement after her dessert was announced as the winner by Camilla, Duchess of Cornwall. "I found out that The Queen had lemon posset at her wedding so I decided the pudding had to be based around the lemon flavour."
