Her recipe can easily be adjusted to opt for personal tastes and dietary restrictions by using a gluten-free crust or low fat dairy, for those looking for ways to keep pizza somewhat leaner.
Additionally, non-meat eaters can enjoy it with breaded cauliflower instead of chicken.
Easy, healthy BBQ chicken pizza
Ingredients
1 gluten-free pizza crust
1/4 cup onions
1 cup cheddar cheese
1 cup mozzarella
1 cup shredded grilled chicken
1/4 cup BBQ sauce
2 tablespoons ranch
Directions
Preheat oven to 400°F. Prepare crust of choice. Prebake crust until crispy.
On a cutting board, slice onion into thin slices. Slices should be as thin as possible, almost able to see through.
Remove crust from oven and top with cheddar, mozzarella, shredded chicken or jackfruit and onions.
Add crust back to oven and bake until cheese is melted, toppings are warm, and edges of crust are crispy and brown. Cook time will vary depending on the crust you choose.
Remove from oven. Top with drizzle of BBQ sauce and ranch. Slice and serve!
