Your New Ice Cream Sandwich Secret Weapon

Hat tip to Questlove for this one: While eating recently at Pok Pok NY in Brooklyn, the "The Tonight Show Starring Jimmy Fallon" musician shared a photo of an incredibly delicious-looking ice cream sandwich. Sure, nothing revolutionary, except this ice cream sandwich has a surprising ingredient that takes it to next-level status.

Rather than sandwiching ice cream scoops between two cookies or crackers, Pok Pok chef Andy Ricker goes the route of the Thai: He serves the sweet stuff in a hot dog bun. It's so simply brilliant. The bun catches any drippings and neatly holds all toppings.

Turns out this is the way the Thai have been doing it for years, and Ricker even says in his cookbook, "Pok Pok: Food and Stories from the Streets, Homes, and Roadside Restaurants of Thailand," that although lobster roll-style split-top buns are best, when Thai vendors can't get their hands on some, they just buy white bread and fold it over.

Ricker's recipe, which stuffs the bun with traditional Thai ingredients like sticky rice and coconut jackfruit ice cream, is how Questlove tasted it. But the options are really endless with this one. Think of it as your new ice cream sandwich secret weapon.
