Back now with the one and only buddy bu. He calls himself the macgyver of cakes and he has a new show and is answering questions live from his bakery in New Jersey. How are you doing, my friend. Good. How are you making out? We are making out very well here but I hear the bakery has become even more of a family affair during the quarantine. Tell us about that. Absolutely, because of covid, you know, a lot of the employees didn't want to work. They were squared and I don't blame them. We got an abundance of online orders and brought my kids to work and we were actually producing cakes like this over here and really just having kind of more of a family affair so they were learning. I got to go to class. Come back and we'll make cakes and it was a really awesome experience to bonding to as a family. The new show is called "Big time bake." Nonstop dessert competition that sounds like fun. What makes this different from the others? Well, for me I always want to create content that you can enjoy as a family that inspires people to be their own baker and want you to watch the show and be like, how can I do it? What's different Abo this show, you have three rounds that happen simultaneously. The clock never stops. Like in a bakery you don't come in and go I'll make cupcakes then when you're finished you make cookies. You're doing it all at the same time. It's nonstop action packed and have to see the cakes these guys make. Pretty amazing. Looking forward to that. Buddy, we should mention yesterday was national cannoli day. I sent you some cannolis. Exactly. We'll dig into some of these. While we move along with the segment, but we have some questions from some viewers would want to bake it like buddy and our first one up is a question from Dorian. Let's take a look. Yep. How can I impress my friend for her birthday and elevate my box layered cake into something fun? Thanks. Okay, Dorian, great question. So what I did here is I took a regular paper plate and cut it and cut it out and have a jagged edge and then I'll take this regular cake and going to comb it a little bit and boom, boom, boom, boom, boom. Now you have yourself a really wild design, a couple rosettes on top and then, of course, what is a cake without sprinkles. They're god's cover-up. Have a hole in the cake, throw extra sprinkles on. Boom, boom, boom and cannolis are fantastic, by the way. Our next question from Courtney. Let's see what she needs help with. Hi, dudz. I've been doing a lot of baking here at home but I wanted some help on how to avoid my cheesecake from cracking and drying out. Do you have any suggestions? All right. Courtney, the trick is you got to bake cheesecake in a water bath. I have a casserole and place my cheesecake inside there and then I'm going to fill up the form in a water bath and what that's going to do, it's going to create less heat directly on the cheesecake. It's going to allow to it rise evenly and not crack and not be dry. It's all about the bath. I love that. We've got another one from Chad. Buddy, your bakery has by far the best cannolis. You got to tell me the secret so I can make them at home for my fiancee. All right. Chad, I appreciate that. What do you guys think? Fantastic. It's all over my lap too. The trick with good cannoli cream is the ricotta. A blend of ricotta cheese emulsified so it becomes smooth. I usually do two parts cheese to one part sugar. I'll let that mix up and then you want to have the right balance of chocolate chips. If you put too many, it's going to be too chocolaty. You want to taste it but it's like an accent, right? And, again, when you make these, we actually have cannoli chips. We have cannolis, actually not to throw a plug in here but you can order those from carlosbakery.com and can you have them. I love to encourage people to bake at home as families and really that's what I'm all about. I want you to become your own cake boss at home.
